INDONESIA WINS DESSERT CATEGORY IN MLA BACK BOX GLOBAL FINALS

Indonesia team, represented by Bulgari Bali Hotels and Resorts, wins the best dessert category in the bi- annual MLA Black box Global Finals in Dubai UEA at the Madinat Jumeirah, May 14th. The team came in 7th place from 19 countries that joined the competition. Overall, Asian countries took home most of the awards. Diego Martinelli (Italian Chef for the Bulgari Bali) and his team I Dewa Agung Putu Karawisa and Bayu Retno Timur, with their team leader Darren Lauder from Bali Culinary Professionals, showed an outstanding effort at the black box taking home the best dessert category.

During the challenge, each team is given a black box filed with mystery ingredients from meats to dry goods, sugar flour etc. The teams are given one hour to devise a four course menu using all the ingredients and one day to prepare the menu. They must prepare dishes for 34 person, 4 portions for judging and 30 portions for the evening gala event for hospitality industry and media participants. Points are awarded for taste, skill, creativity and artistic merit of each dish.
Each team was given a host hotel in Dubai, where Indonesia was hosted the Burj Al Arab. The Indonesian team where given full run of the best hotel in Dubai with a great support from the Executive Chef Luigi Gerosa and his team, and took away a silver award for best table set up.
The MLA black box Culinary Challenge aims to promote a range of Australian red meats and other food ingredients by the involving young chefs from all areas of Hospitality. The competition is held over two successive days, featuring 18 teams from around the world comprising of three members 32 years and below plus a team leader. This global finals of the MLA Black box is the culmination of two years of worldwide competitions stretching from the United States to Mauritius, and from South Africa to China. The MLA Black box, which first started in Bali in 1996 is a WACS endorsed competition and has certainly grown from strength to strength in its 12 years of operations.
Darren Lauder commented that BCP has once again served its objective in bringing up the culinary level in Indonesia, “Their dishes served definitely illustrate finer culinary skills with emphasis on the unique Indonesian flavor and simple presentations, which won the team an award”.

That was really top competition, Im so happy when judge annouce that indonesia team get best dessert.
