Bali Brings Home Gold from Salon Culinaire 2009.
Bali, 27 April 2009…In a stunning victory, Bali’s team for the Asian Pastry Cup swept the competition at Jakarta’s Salon Culinaire 2009 to bring home the gold trophy and once again gain the Indonesian selection to compete in The Asian Pastry Cup in Singapore next year.
The finalists in The Singapore competition will progress to the World pastry Cup, held every two years in Lyon, France, regarded as the ultimate prize for pastry chefs.In other competitions, Bali also won both recognition and medals. For the first time, The Asian Junior Chefs Challenge was held with teams from the region. The newly formed Young Chefs Clubs from Bali and Jakarta competed for the first time, Bali’s team fared well against the more experienced competition from Singapore and Malaysia to bring home a gold medal in the pasta and noodle competition and a bronze medal in the live cooking.
The Young Chefs is a new initiative for the Indonesian Chefs Associations, now affiliated with World Association of Chefs (WACS). It provides young local chefs with exposure to international competitions and provides mentors to oversee their training.
Made Putra, President of Bali Culinary Professionals (BCP) said this year’s annual Salon Culinaire was by far the biggest and the best. “Our chefs have worked so well and the mentoring program has been very successful.”
Wayan Laspina, sous pastry chef at St Regis and his partner I Made Sutisna of Ayana Resort and Spa teamed up with Vincent Stopin, Pastry Chef at St Regis to create the ultimate showpieces and desserts for their entry. With team leader Stefan Mueller of Nikko Resort and Spa, the pair have already enjoyed considerable success at last year’s Singapore competition and feel that having a French pastry chef to mentor them will give them an added advantage next year.
Darren Lauder, Executive Chef of Nusa Dua Beach Hotel acted as team leader for the Young Chefs who included two students, I Made Putra Susila (STP Student) and Ivan Suputra (STP Student) and Jatu Rizki Putra Aburantha of Four Seasons who took the Bronze, and the Gold medal winner in the competition for Junior Chefs, A Alfan M, apprentice chef at the Loop in Canggu.
Salon Culinaire 2009 organizer and President of ACP, Vindex Tengker, Executive Chef of Four Seasons Jakarta, says, ”This event offers great opportunities for junior culinary exchange and science. Some of our chefs are performing at world class standard. I look forward to seeing our Indonesian chefs shine on the international stage in the near future.”
The event was judged by a panel of more than 30 widely regarded international culinary professionals and overseen by representatives from WACS.
Salon Culinaire kicked off on April 15th with the start of Food Hotel Tourism Exhibition 2009. Highlights of the competition included: cookery demonstrations; live cooking

competitions; ice carving demonstrations; buffet and banqueting showpieces; pastry and sugar set pieces; and bakery and confectionery innovations.
The next Salon Culinaire will be held in Bali in April 2010.
